About Sunrise Salmon
Sunrise Salmon was formed in 2014 by us- Kevin and Stephanie Schmidt of Fergus Falls, MN. We spend our time outside of the summer fishing season raising our four young daughters and spreading the love of wild salmon throughout Western MN and Eastern ND.
Each summer we make the trek to Bristol Bay, Alaska to the town of Naknek. This is where we make fish camp every June-July for the annual sockeye salmon run. We are considered set netters, who target one of Alaska’s greatest gems- Kvichak River Reds. This is done with skiffs and a series of large nets and buoy systems on the edge of the bay. We feel extremely blessed to have been given this opportunity to live our summers marked by high & low tide, the barely setting sun and salt water on our faces.
Frequently Asked Questions
Some of the questions we are asked about our salmon, our fishing practices, buying a share, and frozen vs. fresh salmon.
-WHERE DO YOU BUY YOUR SALMON?
The short answer is: We don’t buy our salmon, WE CATCH it.
In some ways, this is our favorite and our least favorite question. What makes this our favorite question is easy. It is easy to answer. We DON’T buy our salmon, we are the fishermen. The people who pulled your salmon out of Bristol Bay are the same people who are selling it to you. No middle-men at all.
The reason that this is sometimes our least favorite question is that, when we are asked, it means that we haven’t gotten our story out there in the public yet. We are the fishermen. We set the nets, catch the fish, have it processed to our specifications and bring it directly to you. This is what sets our salmon apart.
-WHY DO I WANT TO BUY MY FISH FROM YOU?
If a personal connection to your food is important to you, then you’ll want to buy from people you know. Buying direct from the source makes eating food special. Besides knowing exactly where our fish came from, you have an opportunity to get to know us too.
As family fishermen, we take great care of your fish. We take pride in every fillet we offer our customers. Quality and freshness are very important to us. Your fish is caught, bled, processed, vacuum-sealed and frozen each day. This locks in the salmon’s freshness and allows us to bring you the freshest tasting fish in town.
-WHY SHOULD I CHOOSE FROZEN SALMON OVER FRESH SALMON?
There is a general belief that fresh salmon is somehow better than frozen. There’s certainly some truth in that statement — there’s nothing quite like the taste of a salmon cooked right off the boat. But if you live anywhere beyond the immediate area, the truth is that salmon has been out of the water for AT LEAST five days before it gets to your market, even with modern air freight and overnight flights. More likely, it is eight days old. What that means is that your fresh salmon is at the end of its shelf life by the time it gets to you.
Historically, frozen fish hasn’t had the best reputation. That’s for good reason, but not because of the freezing process itself but because of the way it is processed. Most frozen fish on the American market is twice frozen. That is the problem. It is frozen once on shore, shipped whole to a processor (often in China), defrosted, processed into fillets or other products, and then refrozen. When you buy from us, your salmon is caught, processed and immediately brought to shore, where it is filleted, portioned, vacuum-sealed, and frozen to 40 below, all within the same day.
-WHAT SIZE ARE THE FILLETS AND HOW ARE THEY PACKAGED?
The size of your fillets range from 1.3 to 2 pounds. All of the fillets are individually vacuum-sealed and arrive frozen.
-WHERE DO I PICK UP MY FISH?
Our pick up location is Farmers Markets around the area. We have more up-to-date locations on our Salmon Online page.
Pick up dates will be sometime in August or September. You will be notified as soon as we know the dates that the fish will arrive.
